Jean Francois Brouck Appointed Executive Chef At The Balé

Bali, 25th August 2003 - THE BALÉ, a Sanctuary Resort in Nusa Dua - Bali, member of the Small Luxury Hotels of the World and recently included in the Condé Nast Traveler’s 80 Best New Hotels in the World Hot List 2003, has appointed Jean Francois Brouck as its Executive Chef.

Jean Francois, a 28 years old Belgium National brings a new level of creativity to The Bale. His experience includes having worked in Michelin - starred restaurants like the classically French La Villa Lorraine with well known Chef Freddy Van Decasserie and Sea Grill alongside seafood specialist Yves Mattagnes before moving to the legendary Burj Al Arab hotel in another fine dining seafood restaurant, Al Mahara.

Most recently, he was responsible for the successful opening of The Cliff at The Beaufort Singapore, the newest cutting-edge restaurant in Singapore.

Faces Restaurant at the Balé features Modern European - contemporary cuisine with emphasis in Seafood and wherever possible, locally grown organic food using sustainable and responsible techniques with lots of attention to presentation.

Sanctuary Resorts manages several resorts in Asia including The Racha on Racha Island - just off Phuket, Shinta Mani in Cambodia and are developing The Hotel de la Paix also in Siem Reap and additional resort projects: all of them sharing the same values, holistic body, mind and spirit programs and community development with environmental sustainable policies.
